Broccoli and Chicken Pasta Bake

When I was younger we lived off casseroles as they were ready under 30 minutes and could feed a family of 6 in a healthy, tasty way - without breaking the bank. The only secret was you needed to have the "secret sauce". One thing the recipes had in common were they always asked for a can of "something" and most of the time it was cream of chicken (condensed soup). The prices of these cans could add up but more importantly, when I read the ingredients they were always full of preservatives and I couldn't pronounce every one so I decided to make my own from scratch. The thing is, with any canned food or preserved food, they have to add in lots of extra stuff to keep the food from spoiling, so they put in things like salt or more sodium in one form or another, and then add in flavour enhancers too. All of these non food products, made to make food last longer on the shelf, are not really all that great for our bodies. So we want to always try and make fresh if we can first, or just try and limit the consumption of canned and processed foods all together.

The best way to make great tasty soup base is to use good ingredients and keep additions to a minimum - we just are using chicken stock, milk, flour, and some seasonings for our stock. Heat up the stock and whisk together the milk and flour until there are no clumps. Add seasonings to taste. Once we have the secret recipe base down we can add the condensed soup to wonderful pasta bakes. One of my favorites is Broccoli and Chicken pasta bake from Grandmothers Kitchen. All you need to do is add all of the ingredients together in the pan it will be cooked in, and just let it bake in the oven. You can even use casseroles as a way to use up old ingredients form previous meals, to add them together and create something completely new and delicious! Many casseroles are known for having lots of cheese in them too, which everyone tends to love. The leftovers are always great to take for lunches or even to make ahead and freeze to cook when you need it.
